These 5 underappreciated winter vegetables will help you lose weight

America's HCG believes that regardless of whether you hop onto the HCG regimen or not, one thing is for sure: if you can eat something healthy, and it tastes and feels like something unhealthy, then by all means, give it a try!

This article, written by Nicci Micco, focuses on the health aspects of five veggies: potatoes, cauliflower, kale, spaghetti squash and brussels sprouts.  Each paragraph contains links to recipes relevant to that particular veggie.

Two things:

1) Nicci is editor-at-large for EatingWell and co-author of EatingWell 500-Calorie Dinners. She has a master’s degree in nutrition and food sciences, with a focus in weight management.

2) Go here for an awesome recipe on how you can turn cauliflower into a delicious rice substitute (image above).  We here at America's HCG have been doing this for about 6 months now, and we really enjoy it!
